Sunrise Omelet


Serves: 10
1/2 pound bacon
1/2 pound sausage (Linguisa, Polish or Italian)
2 bunches green onions, chopped
2 pounds potatoes, diced
12 eggs
1 1/2 pounds grated cheddar cheese
In a 12 inch Dutch oven or large heavy skillet, brown the bacon, sausage and onions, then remove from skillet.
Brown the potatoes in the drippings until golden brown, then stir in the bacon mixture.
Beat the eggs thoroughly and pour over the potatoes and bacon mix. Bake in 350 oven until eggs are almost done. Add the grated cheese. Continue baking a bit longer until eggs are done and cheese is melted.
 

Sunrise Biscuits


2 pound bag of biscuit mix
1 stick butter, melted
Add water to mix as per instructions on the bag. Mix well and turn onto a floured surface. Kneed for about 2 minutes. Roll dough out to about 1 inch thick. Cut into desired size, we like 3” biscuits. Dredge biscuits one at a time through the melted butter and place into a 16 inch Dutch oven with a little melted butter in the bottom, or onto a baking sheet in a 350 oven for about 25-30 minutes or until biscuits are golden brown.
Cook approx. 25-30 minutes
 

Country Gravy


1 bag of gravy mix
Water
Empty contents of bag into a large sauce pan. Slowly add water suggested on the bag. Over medium heat, bring to a simmer, stirring often, until hot and bubbly.
If thinner gravy is desired, add more water, a little at a time.

Pancakes


1 bag of pancake mix
Water
In a large mixing bowl empty contents of bag and add water according to package directions.
Drop by 1/4 cup measures onto hot oiled griddle. Turn over when the “up side” is covered in little air holes. Turn once. Serve.
You can add smashed bananas, blueberries, corn, even shredded zucchini to this mix. ….almost anything that doesn’t have much moisture.

Stewed Apples


Serves: 6
6 apples, peeled, cored and sliced
1/2 cup brown sugar
1 cup water
1/2 cup raisins
Put all into sauce pan and simmer slowly until tender and juices have thickened. About 15 minutes.
If you keep cookin’ you will have a delicious apple sauce!
 

Camp Syrup


1 quart favorite maple syrup
1 stick butter
1/2 cup brandy
3/4 cup chopped pecans
Put all together into a sauce pan and heat until butter is melted. Using a dipper, pour over your griddle cakes!
Cook time: 10 min.
