Calf Fries

Serves 12
3 calf fries, cubed 1 inch x 1 inch
2 cups flour
6 eggs, beaten
2 cups breading mix
Roll calf fries in flour, then the egg, then the breading.
Deep fry till golden brown.
Garden Salad

1 head iceberg lettuce
1 head purple lettuce
1 cup graded smoked cheddar cheese
1 tomato, sliced
1 cucumber, sliced
1 bunch green onions, sliced
Combine all with Ranch style dressing
Santa Maria Style BBQ Tri Tip

Trim fat from Tri Tip to 1/4 inch. Season with Cowboy Flavor Seasoning and place on the pit fat side up. Turn every 15 minutes.
Total time over fire: 45-50 min. for medium-rare.
Grilled Linguisa

Place over fire for 15-20 min. until hot all the way through. Turning every few minutes.
Ranchero Salsa

1-28 oz. can tomatoes, chopped coarse
1-8 oz. can Ortega chilies chopped coarse
1/2 bunch fresh cilantro, chopped
1 clove garlic, chopped
1 red onion, diced
1 bunch green onions, sliced
1 Tbsp. dried oregano flakes
1/2 Tbsp. chili flakes or 1 minced jalapeņo pepper
Dash of sugar
1/4 cup olive oil
1/4 cup red wine vinegar
Combine all in a large bowl.
Bucked Upside Down Cake

1 stick butter
1 cup brown sugar
1 can pineapple rings, drained (save the juice)
Maraschino cherries
1 box yellow cake mix
Eggs and oil for cake mix
In 12 inch Dutch oven, melt butter and brown sugar.
Arrange pineapple rings in bottom of dutchie, place a cherry in the center of each pineapple.
Mix cake mix according to instructions on box, using reserved pineapple juice for liquid, (adding water to it if needed to make the liquid measure).
Pour prepared cake mix over the pineapples.
Bake in oven at 350 degrees approx. 45-50 min. until toothpick comes out clean.
Cool and turn out onto cake plate.
